Erik Ellestad<p>Silver Fox is an early spring 2024 bud only Yunnan white tea from White2Tea. While this is an exceptional example of the style, I don&#39;t love these types of teas so much as I appreciate them. In any case, they&#39;re good practice for appreciating subtle flavor characteristics in spring tea. I thought I had drunk all of my stock of this tea. Not sure how it got to where it was, but finding a very nice aged white tea is always a pleasure. Erik Ellestad<p>2019 Arbor White from White2Tea is a sun dried Yunnan white tea made from large leaf varietals. Similar to Yunnan moonlight white tea, but unlike Yue Guang Bai, made from spring material intended for puerh production and sun dried, rather than shade dried. Well on its way to being aged white tea, good body in the soup, slight medicinal character in later steeps, and calming energy. An interesting one time experiment that illustrates how much processing style influences the flavor of the finished tea.
