Salt Ponds, ,

They make salt the old fashioned way, by evaporation. They still use a variation of Archimidies screw to move varying concentrations of brine from one pond to a higher pond.

Chilean with and our garden , plus garlic, a few small celery ribs, wine, olive oil, black pepper, pepperoncino, and sea salt. The oranges are juiced, cut into wedges, using ribbons of the zest, plus sliced and caramelized slices. Fennel fronds are garnished on top of the fish at time of service.

#Wine is a vintage 2019 California #Chardonnay from the Carneros appellation in the Napa Valley by Frank Family Vineyards in Calistoga. It has a vibrant citrus-led nose delving into nuanced flavors of baked apple, toasted oak, and brioche on the full-bodied palate.
Plated sea bass
First the fennel is roasted with the potatoes in a baking dish with generous olive oil
Orange zest and juice is also added to the initial baking, prior to adding the fish at the final stage.
